Easy Saucy Ramen Noodles (Vegan Recipe)


Really easy and fulfilling noodles with a flavourful sauce! You also can add in a few greens and tofu of your desire to those noodles. And if you’d adore it more saucy, you can double the sauce to go together with your vegetables and tofu. Enjoy!


  • Two 70g each uncooked ramen “bricks” or other noodles of choice
  • Spring onions and sesame seeds for topping

Sauce (you can double this if you’re using more noodles and veggies!)

  • 1/2 cup room temperature vegetable broth or water
  • 3 to 4 tbsp soy sauce adjust according to desired taste
  • 1/2 tsp dark soy sauce, optional for colour
  • 1.5 to 2 tbsp corn starch* see notes
  • 2 to 3 tbsp maple syrup or sugar, adjust according to desired sweetness
  • 1 tbsp lemon juice or sub rice vinegar, adjust according to desired sourness
  • 1/4 tsp ground pepper
  • 1/2 tbsp toasted sesame oil


1 Mix all the sauce ingredients in a bowl until well incorporated and set aside. Boil water. Add in the ramen or other noodles of choice and half cook or cook until chewy.
2 While the noodles are cooking, heat a pan. Sauté veggies or tofu, if using. Afterwards, add in the sauce. Leave to simmer over medium heat.
3 Mix the sauce again to make sure the starch doesn’t stick at the bottom. Add in the noodles and mix in the sauce.* (see notes). Cook over medium high heat until the noodles absorb the sauce and sauce thickens. Season with some salt and pepper if needed.
4 Garnish with sesame seeds and spring onions, if desired. Enjoy immediately while hot!
