It is not Halloween without salty, crispy, roasted pumpkin seeds. They’re packed full of vitamins, fiber, and minerals plus they taste amazing. Perhaps this can help offset the impact of the tiny chocolate candy bars that I continue sneaking in the Halloween stash at our cabinet.
I can not allow October pass without carving a minumum of one pumpkin. And while my jack o’ lanterns are less spooky as anticipated, my roasted pumpkin seeds are delicious–and super simple to create at home. Here is the way to do it in your home.
- 2 cups raw pumpkin seeds
- 4 tbsp melted salted butter
- To taste salt
|1||Preheat oven to 300 degrees.|
|2||Remove the seeds from your pumpkin and rinse off as much of the pumpkin meat as possible.|
|3||Melt butter in a large bowl, add the seeds and coat them in the mixture before spreading them evenly on a greased baking sheet.|
|4||Bake for about 30 minutes, stirring them around every now and again. (Note that the butter will make them a little brown.) Salt them to your liking and enjoy this great snack!!|
